Adding to my fusion collection, this one is ramen meets cheese sauce with beer. I think my Korean friends would go nuts for this one. In fact, I think most people would go nuts for this one. But file it away with those “once in a blue moon because it leads to heart attacks” recipes. It is, as you might expect, super delicious & incredibly unhealthy. I recommend that you don’t make this one often.

In Korean the word for ramen is ra-myun and the Korean word for beer is maek-ju. Certain foods or other drinks that are associated with drinking beer have combination names. For example, eating fried chicken is associated with drinking beer. So going for beer & chicken is called “Chimaek,” like chicken + beer. Also, drinking soju mixed with beer is called “Somaek,” and it is a dangerous combination.

This is where the “maek” instead of “mac” part of my recipe title comes from. I used beer in my cheese sauce and used ramen noodles in place of elbow macaroni. The other Korean elements for this recipe are gochujang, kimchi & mini oyster mushrooms.  The sauce is a little heavy for ramen noodles so be sure to keep the noodles slightly crunchy. Avoid overcooking them so that they are strong enough to hold the sauce. Enjoy!

Ramen Maek n Cheese

  • Servings: 6-8

Ingredients:

  • 2 packages uncooked ramen noodles
  • 6 oz. monterey jack or cheddar cheese
  • 1 egg
  • 2/3 Cup beer
  • 1/2 Cup sour cream
  • 1 1/2 tsp gochujang
  • 1 Tbsp cornstarch
  • 4 Tbsp butter
  • 2 Tbsp flour
  • 2 drops sesame oil
  • 1/2 Cup kimchi, finely chopped
  • 1/2 Cup mini oyster mushrooms, sliced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Boiled eggs & green onions for serving, optional

Directions:

Boil ramen noodles for 3-4 minutes, careful not to overcook. They should be al dente.

Meanwhile, heat sesame oil in a pan over medium heat. Sauté the kimchi & mushrooms for about 3-4 minutes or until slightly cooked down.

Whisk the beer, sour cream, egg, gochujang & cornstarch together. Set aside.

Melt the butter in a sauce pan over medium heat. Stir in flour until it reaches a thick consistency. Stir in the beer mixture & bring to a simmer. Remove from heat & add cheese. Stir until fully melted. Season with salt & pepper. Add the kimchi & mushrooms to the cheese. Finally, stir in the noodles until fully coated with the cheese sauce. Serve with boiled eggs & green onions.

  1. Okay, I thought the mexican food from yesterday sounded good, but this sounds amazeballs! I don’t know if you know about my love for KD but it is immense. Oh and you can get it here for $2.50/box! I may just try this recipe with a box of KD tonight ^^
