These are simple & down home. I was attempting to recreate this pancake I had while in Koh Phi Phi, Thailand. It was a pancake but had the texture of a biscuit. I had never had anything like it before and it was absolutely delicious. In my attempt to recreate it, I decided to make a skillet biscuit but one that would be more similar to a pancake. What I came up with was a bit of a savory pancake. The sweetness came from the fruit & syrup. It was one of the more delicious pancakes I’ve made so I had to share it here.
Pineapple-Banana Pancakes
Ingredients:
- 1 Cup all purpose flour
- 1 teaspoon baking soda
- 1/2 Tablespoon baking powder
- 2 Tablespoons sugar
- 1 Cup milk
- 1 Tablespoon melted butter
- Bananas & Pineapple sliced
Directions:
Whisk the flour, baking soda, baking powder & sugar together. Add the milk & melted butter. Heat a pan over medium-low heat. Melt a little butter in the pan for each pancake. Pour 1/4 Cup of the pancake batter in the pan at a time. Add sliced bananas & pineapples to the pancake as it is cooking. Cook for 3-4 minutes per side or until golden brown on the outside. Serve with lots of butter & syrup!
